Quick and Easy Dessert Recipes from recent YRUU Cookoff
10-Minute Strawberry Cobbler for One
⅓ cup all-purpose flour
¼ cup instant oats
1 tablespoon light brown sugar
¼ teaspoon cinnamon
¼ teaspoon baking powder
1 tablespoon cold unsalted butter, cut into small pieces
2 tablespoons whole milk
1⅓ cups chopped strawberries
¼ cup confectioners’ sugar
Whipped cream, for serving

- In a small bowl, mix the flour, oats, brown sugar, cinnamon and baking powder.
- Add the butter and cut it evenly into the flour mixture with a fork. Add the milk and stir until the mixture comes together. Set aside.
- In a large microwave-safe mug, stir together strawberries and confectioners’ sugar. Pour the oat topping over the berries.
- Microwave the cobbler until the topping is set, 1½ to 2 minutes. Cool slightly and serve warm with whipped cream.
Chocolate-Chip Mug Brownie for One
3 tablespoons all-purpose flour
2 tablespoons cocoa powder
¼ teaspoon baking soda
2 tablespoons light brown sugar
1 tablespoon granulated sugar
Pinch of fine sea salt
3 tablespoons vegetable oil
3 tablespoons whole milk
½ teaspoon pure vanilla extract
3 tablespoons chocolate chips
1 or 2 mini peanut butter cups, unwrapped

- In a large mug, stir together the flour, cocoa powder, baking soda, brown sugar, granulated sugar and salt. Add the vegetable oil, milk and vanilla extract and mix until smooth.
- Stir in the chocolate chips. Press the peanut butter cups into the center of the batter.
- Microwave for about 2 minutes, until a toothpick inserted into the center comes out clean. Let cool for at least 5 minutes before eating.
